Fish Parmigiana

All the flavor of this popular dish without the caloric load of parmesan cheese!

Serves 4 

Ingredients:
1 cup canned stewed tomatoes with Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup seasoned bread crumbs
2 pounds cod filet
1 tablespoon olive oil

Directions:Preheat oven to 375 degrees. On a flat plate, combine salt, pepper and bread crumbs. Coat fish on both sides with crumb mixture. Place fish in casserole dish, pour tomatoes over fish and drizzle with olive oil. Bake at 375 for 30-35 minutes.
